Gus's Casserole

This is one of my mom's recipes that she got from my grandma (maybe?) so I have zero part in making this original besides my usual substitutions (lean meat, low sodium ingredients).  But, it is something that we like to eat and every time I want to make it I have to call my mom for the recipe because I always forget...so I am writing it down!  Why I can't remember this super easy recipe, I don't know...I'll blame it on being pregnant =)

I am not sure where the name came from, but that's what my mom calls it.  I guess it's a fav of my dad's, or maybe it was my grandfather?

I also didn't take pictures of the whole process because I made it late one night last week and I was too tired!  And, Barry had done the noodles for me and there really isn't much else to it!

So...grab the following...

1 bag of egg noodles (I only had about 3/4 of a bag which worked just fine)
1 pound of lean ground beef (90/10 at least)
1 can Healthy Request Cream of Mushroom Soup
1 cup low fat sour cream (Greek Yogurt would work too)
1 can low sodium/no salt added corn
1 small jar of pimientos (I can't remember how big, they are mostly just for color anyways)

Preheat the oven to 350.  Boil the noodles.  Brown and drain the ground beef.  Combine all the ingredients together in a casserole dish.  Bake for 25-30 minutes.  Done.

I topped mine with some Panko break crumbs just for kicks, but not necessary!


As much as I am enjoying the marching band practicing outside my office (yes, my office is inside), I think that's my cue to go out to practice!
